Ingredients (Serves 2)
1/3 cup amaranth seeds1 cup milk of your choice (plant-based works beautifully)
1/4 cup water
A pinch of salt
Sweetener of your choice (honey, maple syrup, agave, or date syrup)
Step-by-Step
Cook the Amaranth: Place the cleaned amaranth seeds (see tips below) in a saucepan with the milk and water. Bring to a gentle boil over medium heat.
Simmer to Creamy Perfection: Lower the heat and simmer for about 15 minutes until the porridge is creamy. Test a grain by rolling it between your fingers – if it’s too firm, give it a few more minutes.
Sweeten to Finish: Add a pinch of salt once cooked. Remove from heat, let it cool slightly, then stir in your preferred sweetener. Make it a summer recipe – refrigerate until chilled to serve cold.
Serve Your Way: For a lighter consistency, stir in some extra cold milk before serving. Top with your favourite fruits, berries, or seeds for a delicious finish.
Tips:
Cleaning Amaranth: These tiny seeds can be tricky to wash. To remove chaff, pour the seeds between two containers a few times while blowing lightly, or shake them on a plate to separate the seeds.Flavour Enhancers: If amaranth’s nutty flavour isn’t your favourite, add a splash of vanilla extract, rose water, or even a spoonful of cocoa powder.
